When it’s too hot to turn on the oven or I’m feeling downright lazy, I turn to salads. But not those wimpy side salads you get at restaurants that are covered in ranch dressing. No, those are digesting and do not deserve to grace your mouth. I’m talking salads that are complex in flavor and utilize the best of the season’s produce.

With summer in full swing, you have tons of fresh options to choose from. As of right now, I’m digging sweet crisp cucumbers and juicy peaches. I don’t know what made me think to combine them together, except I’m so glad I did.

This salad is a refreshing snack when it’s too hot to turn on the oven! Juicy peaches are combined with crisp cucumbers and feta for a sweet-salty taste explosion that will quickly become your new favorite.

Ingredients

  • 2 English hothouse cucumbers, sliced
  • 2 yellow peaches, halved, pitted and sliced into wedges
  • 2 ounces of feta cheese
  • 4 green onions, chopped
  • 2 tablespoons cold pressed olive oil
  • a good pinch of flaky sea salt
 

Instructions

  1. Arrange cucumbers and peaches on a medium sized platter. Scatter green onions and feta cheese over top. Drizzle with olive oil and then season with flaky sea salt. Serve.
