Easy Cherry Salsa

With summer officially in full swing, I’ve been trading my sweaters for short sleeve t-shirts and warming pots of soups for salads. All last week it hit the upper eighties, which wouldn’t be a huge deal except Seattle doesn’t believe in AC. You basically plop yourself in front of a fan and don’t move. Also, pants or anything that touches your sweaty skin is banned.

Thankfully, this is the time of year where you have an abundance of wonderful produce to pick and choose from. On constant rotation lately, cherries! More specifically, Bing cherries. I prefer Bing’s because they have a darker richer flavor and aren’t as sweet.

They are great in tarts, sauces, jams and or salsa. Last week, when I was walking home from the market with the fixings for fish tacos, it occurred to me that I could chop up the cherries I had and throw them into a salsa. This Easy Cherry Salsa comes together in seconds. It requires chopped red onion, lime, grape tomatoes, and cilantro. That’s it! Enjoy!

Easy Cherry Salsa

Yield 6 servings

1 cup Bing Cherries, pitted and chopped 

1 red onion, chopped 

1 pint of cherry tomatoes, sliced 

1/2 bunch of cilantro, chopped 

1/8 cup fresh lime juice 

Ingredients

In a large bowl, stir together cherries, red onion, and cherry tomatoes. Add lime juice and cilantro, toss everything together. Refrigerate for 30 minutes. Serve.
