Hey guys! It’s been a hot minute since I last posted a recipe here. For that I apologize – I’m going to try and get back into the swing of things. Work and life, in general, has been crazy lately but in the best possible way so no complaints.

How is your January panning out? Have you stuck to your new year’s resolutions? I don’t normally do resolutions and instead set a word for the year. For 2018, mine is grace. Grace with myself, with my friends and my family.

Now let’s move onto why you are really here – Apple Cider Roasted Chicken. I had big plans to post this recipe back in September but I think it’s just as fitting to post it now. It’s the ultimate cozy comfort meal that is primarily hands off. All you have to do is boil down the apple cider, then brush on the skin and roast for 60 minutes. The chopped apples on the bottom of the pan melt into an applesauce-like mixture you can serve on the side. Done and done.

If you have a Trader Joes near you, I would recommend you get their brined organic chicken. It’s the best! The meat always turns out incredibly tender and juicy.

Apple Cider Roasted Chicken

This Apple Cider Roasted Chicken recipe is a quick weeknight dinner! The meat gets tender and juicy while the apples on the bottom cook down into a sauce that you can serve on the side. 

Ingredients

1 free-range chicken

2 cups apple cider

Salt + pepper,

1 onion, chopped

1 honey crisp apple, chopped

Instructions

  1. Pre-heat oven to 450 degrees F.
  2. Place chicken into a cast iron pan. Pat dry with paper towels. Sprinkle liberally with salt and pepper.
  3. Boil apple cider in a saucepan, until reduced to about 1 cup. Let cool. Brush half of the cider mixture into chicken. Place chopped apple and onion into the bottom of the pan. Place the cast iron pan into the oven. After 20 minutes, cover with foil and reduce heat to 400 degrees F. Cook for an additional 40 min or until juices run clear. Once done, brush with additional apple cider glaze. Serve.
